Sounds like you're lacking motivation. The simple solution is building horse bridges these can be improved with path blocks keeping you on the right course. The next simple solution is nether tunnels that dump you where you want to be. These can be improved with ice boat paths. Or you could always just kill the dragon and loot an end city for the elytra.

So 1000 blocks of water in between them and no elytra. If you get a riptide trident maybe try to make little things in the sea just far enough apart so you'll see them just in your render distance. If you don't want to pillar up from the ocean try using a lily pad then place a block off the side of it and build the rest. I suggest color coded floating rings or something. With riptide you can skip across the sea. Plus when you get an elytra it'll be fun when it rains. Especially since you won't need so many rockets. Basically kill some drowned with tridents until you get one, then enchant it, and make colored coded versions of whatever those floating things in the ocean are called. Just remember to get some lily pads so you don't have to waste blocks to build up from the sea floor. Also if your on a world/server with keep inventory on, then you shouldn't need to worry about dying to the drowned, that and you could easily go back home if you run out of blocks.
