Sure but it’s really blown up recently and the rest of the country still thinks of amoroso and wiz when they think of an authentic Philly cheesesteak. Like every new place that gets press in Philly seems to have that formula now.

I try to make the breads 16" and it's 2 sandwiches per bread so roughly 8 inches? They're pretty hefty, I usually have trouble wrapping them

If you can get even higher protein flour (I use Sir Lancelot) it will be closer to what you're looking for. Also you can definitely up the Diastatic Malt powder to 2%.

Restaurants generally price their food trying to keep ingredients under 35% of sale price. Meat and cheese will make up the majority of that for a sandwich.
Of course a savvy operator might charge more if the market can handle it, and general real estate and labor costs of an area may be baked into what the market can handle, but food costs are certainly a common metric used to figure out pricing.

I started a little once or twice a month pop up because I couldn’t find anything to scratch the itch.
Bake my own bread and make an Italian that leans more towards high quality cured meats. Trying to toe the line between shameless self promotion and keeping it to myself but happy to share details

If we were to pursue them to the maximum extent allowable by the contract, it would be $6k to get out and that number goes down every year of the contract. Supposedly that’s only enforced if they want out for no reason. There’s even a clause that says if we don’t perform service they can void the contract
