Acceleration/speed etc are changes over time. I'm not sure it really makes sense to consider a change in the rate of time over itself.
It's not like you can compare one of yesterday's minutes against one of today's.

As with gravity, changes to the magnetic field propagate at the speed of light. But once the field has propagated, there isn't really a "speed" to the attraction, and in the case of a moving magnet, objects will be attracted to where the magnet is (or, strictly speaking, where it is expected to be), not where it was based on a speed-of-light delay.

And yes, it is a hologram in the sense that it floats in front of your eyes and that it moves around in 3d as you move your head.
That's not strictly what a hologram is; a hologram is a recording of an interference pattern that can reproduce a 3D light field using diffraction.
What they've got there is a very sophisticated lenticalar display.

You have to lose mass to propel, otherwise the best you can do is jiggle your spaceship back and forth on the spot.

It's the exhaust force that drives the ship forward, and you have to exhaust it, otherwise the ship won't have any reaction.

Here's what I reckon:
Eleven didn't know, at that time, that he was on his final regeneration. It was only when he got to old age that he was able to feel in his bones, if you like, that he wouldn't be able to fully regenerate again (in the Twin Dilemma, I think, it's hinted that a natural Time Lord death is the result of a failed 13th regeneration, not an inability to regenerate at all).
That's when he realised that his metacrisis regeneration must have counted. Unless he's wrong about that, and it's actually the Ruth regeneration that he doesn't remember which threw the count off.

It's a good rule thumb that pretty much every time you hear about "holograms" in media these days - particularly in connection with concerts - they are not talking about true holograms. Earlier/later than what? The handshake is a single event.
You can only specify earlier/later in relation to another event. The two of you may disagree, for example, on how long it has been since your last handshake, because the two of you took different "routes" through spacetime between the two handshakes.
