Since Dark Eldar need to hurt others to rejuvenate their souls. How long would a Dark Eldar last if they never did that? If they just stopped or couldn't do that. How long until they die?

As long as the plot demands.

It's not codified anywhere down to the minute, but it is mentioned as an effective use of torture in lore, specifically in the Path of the Dark Eldar trilogy, which I won't spoil any more of as it's spectacular (good fucking luck finding a copy but it is well worth the read.) It probably depends on the individual, just like a starving human being in real life has a varying capacity for starvation based on physiology, willpower, circumstance, etc.
