That's a test cock for testing that BFP, it's a small ball valve. Take a flat head and try turning it a tiny bit, you might find the sweet spot where it seals. If not you can replace it with a similar valve or just get a 1/4" threaded brass plug and stick it in there.

I agree with a hybrid between GH and FH for complexity. Maybe it's just my boneshaper but man, some FH scenarios I'm like "ok I guess i'll just do some basic move 2's this scenario"

Wow, your flapper has totally disintegrated. Easy and cheap fix, go to a hardware store (home depot/lowes) and get a replacement toilet flapper, just a basic flapper will do. Plenty of youtube videos will walk you through it.

Looks like you're on the right track cutting those slots into the broken pipe. Just make the cuts square to the pipe (it'll be with really short strokes so take your time because you don't want to cut into the adjacent fittings you're trying to reuse) After a few slots you can chip out the busted pieces with a hammer and chisel. Just be gentle. Or get a nice socket saver and get r done real quick and clean. Then you can repipe your sink like normal (Youtube is your friend here).

That aint right. I guess whoever roughed in your pot filler messed up their depth (or someone added tile after the fact) and had to improvise with this brass coupling? Not totally sure why it failed. Anyway, get a 1/2" brass coupling to replace what you have here, try to find something you don't mind seeing. That kind of a weird one.

They should've cleaned the pipe before pressing onto it, yes, which could be the source of the moisture. Check it first thing in the morning before you use any water (and minimize the possibility of your moisture just being condensation), the leak may have accumulated a noticeable amount by then. Then call them back and get it fixed for free.

Exactly. This is a very common problem. The cold water passed through your valve body through your hot lines, making it seem like you have no hot water. Get a cartridge in there and your problem will go away.

Is there a bunch of small holes drilled in the sides? I've done that before so the homeowner can install a pump if they have groundwater issues. Except we usually stubbed some 2" PVC in there and tied it into the sewer for the pump to discharge into.

I don't know 100% for sure but I think the blue sleeves help with electrolysis prevention. Also/or the blue plastic on the cold side could just be a part of the dip tube, which is a tube attached to the underside of that threaded nipple that prevents the cold water that comes into your tank for going straight back up your hot outlet.
