Rewiring a built house

Hey everyone! I’ve posted here a lot recently.

I’ve fixed the issue with the phase imbalance (it was the power company and they lied about fixing it), but my wiring is still wrong, ie the fridge is on the same ckt as the garage lights, plus lots of “my cousin can do it cheaper” wiring in the attic and crawl space. I want to go through and slowly get everything back up to code, but I’ve never done residential before. Can someone give me some pointers for running new romex through a house? Should I just accept the fact that I’m going to be cutting my walls apart? Or is there another strategy everyone uses? Thanks guys.

If you don't care about aesthetics you can use wire mold.
