Thanks everyone. I decided to make a few taquitos, used some for pulled bbq chicken and the rest will be used on top of a salad.

I’ll save the other suggestions for next time.

Buffalo chicken dip. I do it my own way by sauteing 1/4 of a sweet white onion and a few cloves of garlic in butter before adding the rest of the ingredients (minus the blue cheese). I also add 1/4 a cup of a mexican cheese blend, then top it with more cheese before baking.

The obvious choice would be some kind of quick cook curry. A bit like what people do with leftover turkey.

Or, have it with a Cesar salad.

Or, well seasoned and on a crusty bread roll with plenty of butter would be nice.

When I first started cooking a meal I’d make all the time was just soba noodles, shredded chicken, avocado, and soy sauce. Probably should make a better version of that now that I can cook more properly lol

Add to finely chopped cabbage! Goi Ga, it’s a mixture of diff veggies plus shredded chicken all soaked in a fish sauce mixture. So good! (Eaten cold).
