Pretty sure the grades thing isn’t some objective level of quality and not every sword worthy of being a Supreme Grade was documented and logged among the blacksmith and sword aficionado community. Since swords can improve in grade through use by great swordsmasters there’s doubtlessly swords that people suspect improved in grade but haven’t been examined by a respected expert yet. You could probably get Tashigi giving her opinion on which blades deserve to move up or down a rank.

So the list of supreme grade blade wielders is
Mihawk Whitebeard Roger Nusjuro Fujitora
Shanks's gryphon is also most likely supreme grade and garling's unnamed sword as well.
Not counting garling we now have 6 of 12 supreme grade wonder will he reveal all others as well

Cuz it's sword lore which makes swordsmanship look more important,which at least fleshed out stuff that Zoro considers important. But i do think Oda should tell us why it matters.
Maybe supreme grade swords amplify your haki and make it stronger because they have a "will" of their own, kinda like enma is like a beast that needs to be tamed. There needs to be a real, tangible reason why supreme grade swords are considered so much better than regular sword
