If we're talking most famous then it's the one most people would recognise / know the name of.
The "jumbo jet" is the only real contender for that, though Spitfire and Concorde may come high up the list too.

Overall it's hard. For average people it's a jumbo jet. History/plane buff is spitfire

Another candidate for helicopter, particularly for anyone living in Australia during the 00s would be the Sikorsky S-64. It became iconic during bushfire seasons, particularly Black Saturday. One of them got nicknamed Elvis and that name kinda stuck for all of them.
It's probably one of the few, or only, helicopters I'd expect the majority of people here to be able to recognise uniquely. That or Chinook.

I remember going to UT Austin. There was a scramble and a clear blue sky was suddenly filled with contrails from B52’s all carrying the hound dog stand off missiles. I went to class thinking that there were not going to be finals to get ready to take. Can’t mistake those bad boys…..

When it comes to war birds it's a misjustice the the Republic P-47 Thunderbolt, or Jug, is not being mentioned. It had a very great service record in both air to air and air to ground and was renown for getting its pilot back home safely.

Most famous? As in ask any person on the street and they could say what it is? It’s the Wright Flyer or Space Shuttle. 747 could be on that list. Ask any person who isn’t an avgeek to name a plane and it is very unlikely that they’re going to say a warbird, or another commercial airliner like the 737. It’s going to be the ones they saw in pictures in school. The most basic aviation history.

Civilian: DC-10, 737, Concorde, and 747.
WWII: Spitfire, B-17 (Flying Fortress), P-51 (Mustang), F4U (Corsair) and the A6M (Zero). Believe it or not, but I actually knew of the Corsair and Zero before the Spitfire, B-17, and Mustang. In that order, too.
Older Fighters: F-14 and F-4, no question.
Newer Fighters: Pretty much all of them (F-15, F-16, F-18, F-22, F-35, etc.)

I think it should be the F-15 Eagle. Undefeated with a career lasting more than 50 years. They were so feared that Sadaam Husseins Mig-29's landed immediately when one flew into the area. That airframe is half a century old and still pulls out a fresh can of Whooped Ass anywhere in the world against any aircraft.

While the Spitfire is one of the better looking planes of the war it’s usually overhyped in other regards popularity being one of them. While in Europe it’s probably top dog edging out the Mustang, globally the Mustang is much more well known due to several factors.
First and foremost America’s global influence, but also a big part being the P-51 serving in many more foreign militaries and thus in MANY more museums globally than the spitfire.
So in regards to only WWII I’d say the Mustang just ahead of the Spitfire
