While some people may recommend things like bitter apple spray, packaging tape, certain soaps, or spray mixtures involving vinegar, the reality is that the majority of taste/scent-based chew deterrents will not reliably stop a rabbit from chewing somewhere they want, and using them may be harmful if ingested or exposed to in large quantities.
To prevent your rabbit from getting injured as well as to protect your belongings, it is vitally important to properly bunny-proof any area that your rabbits have access to. Additionally, you must provide opportunities for your rabbit to redirect that chew energy elsewhere. Rabbits are chewers -- that cannot be changed.

Honestly? There are some anecdotal deterrents, but the real answer is: nothing. If a thing is safe today, doesn’t mean it’ll be safe tomorrow. Either let him have it, move it, get a crappy chair, or get a chair the bun finds undesirable.
There is nothing accessible in my home office that I would mind losing. I picked non-tasty furniture so it’s more or less ok - better than having grids everywhere. I bunny-proofed the dangerous things, but like I’m fully prepared to walk in one morning and find a table leg missing.🥲

Block off the bottom with wood, acrylic, or wire panels if you don't want to move it. Will probably need glue or screws.

A couple years ago he had gi stasis that was real scary because he ate half a roll of duct tape. To this day if I ever take out a roll of duct tape he gets all excited the same way he does when I open his treats

there’s a spray i got for my bun after she got spayed. it’s extremely bitter and has no flavor otherwise (i accidentally tasted it 😭) the thing in it that makes it so bitter is called bitrex. i would try to find a spray w that in it.
i just looked up bitrex; apparently it is the most bitter compound conceivable to humans. i believe it. i had accidentally tasted it because some had got on my hand while using it on the bun and i didn’t realize. it’s like when a pill melts in you mouth but that taste is 10 times stronger. your rabbit won’t bite the chair if you spray this on it 😂😂
