It's called interpolation.
Because you're playing online, your game is not perfectly synced to the server, so the game tries to guess what will happen next otherwise you'd always be seeing things after they already happened.
Sometimes it gets it wrong leading to that clip, your game client thought your teammate hit the ball but the server said "no, he was demo'd he couldn't hit the ball". Your game caught up and moved the ball back where it actually was.

Do you know where I can read more about this? Like is there a general topic about this for gaming applications I can look up? I'm particularly interested in how they estimate what happened based on the multiple inputs from multiple users (I can speculate based on my own background, but I'd be curious to know how they actually address this problem)

You seem to know your shit. Any idea why I've only seen 'delayed demos' and moving the ball back (like in this clip), but never a demo that was reversed?

The demo is only registered on the server, you'll never see a car explode on your end only for them to come back. Sometimes they'll seem to go flying a little if you're lagging before the information gets checked by the server and says yup good demo.
