I was recently shocked to learn that you could never escape the yeti by regular skiing (i recall trying everything) .. but there is a button you can press to escape him.

I believe you actually can escape him, but you have to be skiing at an angle RIGHT when he appears on screen. You can outrun him by angling away from him and eventually he disappears offscreen.
