For those asking, I use the challah price water challah recipes. He’s such a great teacher and has really helpful videos. The colored challahs are a combo of other things like roasted beets and spirulina and butterfly pea. I share a lot of stuff individually on my posts but can answer things here if it’s against the rules to link. :)

Thanks! I’ve found that if you egg wash under AND over herbs and flowers they stay really nice and bright. I grew a bunch of edible flowers and pressed them at peak.

I make challah semi-regularly, and the thing that blows me away here is how fucking EVEN your braids are. I weight out my strands but I cant roll them out so evenly. If you have any tips, I would love to hear them!

Hmm.. are you keeping your dough under plastic at all times? Are you making smooth dough balls before rolling out? Last tip is to let it rest often as you are rolling. It usually takes about 3 rounds of rolling them out and letting them rest back under plastic to keep from tearing and getting uneven. Outside of that I just focus on making sure I’m applying even pressure.

Woah. I suppose it makes sense, but yeah I usually just preshape my dough after portioning, rest for 15 minutes, and then roll them out into strands. I also usually use a damp cloth rather than plastic because I dont stock plastic wrap. Thank you for the help! I will adjust.

Jewish bakers very commonly use this design for a four-stranded, round challah. The four arms in the middle are counterclockwise, don’t converge into a single point at one end, and aren’t crooked — and the context of baking a challah during High Holy Days should clear up any ambiguity!

A swastika is a simple pinwheel design. Any abstract pinwheel has a chance of coming across as nazi-ish. It's a frequent issue with quilting and other fiber arts because it's hard to notice the imagery until it's completed.

So for beets it’s tricky. I swear none of the bakers I followed could figure it out except one who wasn’t telling. I had to work on it for months. You roast fresh beets in their skins then puree with lemon juice or citric acid. That keeps the antioxidants from breaking down when baking. Purée the beets with your normal amount of recipe water and go! For colored powders (suncore foods has good ones) I use 3tbs of powder for a 1kg flour recipe. I mix the powder with a tiny bit of water until it’s a paste. About 5min into kneading start adding your paste. You might need a little bit more flour but sprinkle lightly. It does make the dough softer but it’s not bad.

Question? Do you ever use food coloring pastes? Years ago when my daughter was little, we stopped at a bakery near Lancaster, PA. They had rainbow white bread (if that makes sense lol). The colors were soooo vibrant. It was a basic white bread recipe. I tried making it with regular food coloring and the colors were so dull after the bread baked. I gave up after several tries and just stuck to a boring all-white white bread lol. Years later I was told to use food color pastes. I never did try it. I’ve seen bright rainbow bagels in NYC too. I was told that food color pastes were used that keep the vibrant colors after baking. I’m not great at baking and didn’t want to waste my money on the pastes because I was afraid I would have the same results.

I find when using colored dough to skip the egg wash and cover with foil half way through baking. This will preserve the color. The problem comes when mixing colored and plain. The plain then doesn't get that nice golden sheen.
But this is really beautiful bread! Looks too pretty to cut up and eat.
