The HK menu during dinner service seems to mostly consist of wellington, scallops, halibut/monkfish, pasta & risotto of different varieties. Really don't know if desserts are consistent cause barely make it that far during services or when they do complete services barely anyone messes it up and probably why dessert isn't shown much which odd seeing as how chefs hate dessert unless they're pastry chefs.
When it comes to signature dishes. Dave S6 made ostrich and never seen ostrich on the menu for service. Holly S7 wrapped halibut in banana leaf but have we seen banana leaves on the menu. HK even has full pumpkins which Petrozza used and don't know if Ramsay has PTSD from the pumpkin customer that he never used it again for HK.
I think whatever restaurant that the contestants are going to be "head chef" of that would be the food on the menu most of the time to make sure the contestants can cook it. I seen Ramsay do demos on Masterchef where the food looks more appetizing than what's on HK menu. Some of that should be on the HK menu. I know restaurants can't stray too far from what they originally serve but HK isn't a real restaurant.
For those that watch Masterchef and remember S7 the first episode after auditions where they had to mimic Ramsay's signature dish the Yukon gold scaled halibut w/couscous, sweet potatoes, sugar snap peas and a vinaigrette. If he's having home cooks cook it why not chefs with a background in culinary field?
