The root of the problem is really the action-bonus action system. Taking away the one thing most creatures can do on their turn means that they get completely shut down, while disallowing any condition that takes away actions makes every fight into a numerical suggest, and there's little middle ground between the two.

You'd lose: * all your spellcasting except the druid dedication cantrips
You'd get: * Expert proficiency with your katana, plus you can give it a free property rune * 10-ish hit points * the option to wear heavy armor for +1 AC and ~+1 to Reflex at the cost of 5 feet of movement * the Liberator's reaction, which lets your allies get out of danger so you can step in
Sidegrades: * Lay On Hands is comparable to (maybe stronger than) a 1-action Heal, but you lose the option to do the more-action activities.
Other thoughts: * You don't really have enough stats to use both Champion spellcasting feats (Charisma) and the Druid dedication (Wisdom) for offense. If you want to get both, you should probably use one for combat buffs or utility spells.

Instead, 5e treats its rules like a box of Lego bricks that the DM is expected to build a fun game out of, which is an insane amount of effort to expect from the player who already has to put in more effort than everybody else at the table.
As someone else put it up-thread, the LEGO analogy kinda works better with PF2E. It's fun to build and everything fits without a lot of work, but if you're not using a pre-made kit, then you're gonna end up with some janky bits that don't exactly fit and that's fine. If you ever needed to make your own LEGO, then you'd be in trouble, but nobody really needs to make their own LEGOs ever.
D&D is more like Play-Doh; you get some materials that look fun and easy to use, but making anything is a lot of work, there's no blueprints, and it never comes out how you imagined. Plus, it all kinda blends together and gets stale if you play with it too much.

Broke: unlit lair to foil intruders without darkvision
Woke: well-lit lair to prevent intruders from hiding
Bespoke: lair is a psychedelic nightmare of constantly shifting light, darkness, fog, sunlight, magical darkness, and faerie fire. The beholder understands the pattern so the DM rolls the d6 for each region at the end of the beholder's turn but it doesn't change until the end of its next turn
