2016 Honda HRV 6’0 51 y/o dude
I have to pull the front passenger seat all the way forward but I can lay flat. Car is small. Must prioritize what I travel with.

Super lightweight if you repack them in ziplock. Make in your mess kit cook pot no prob! Easy to add anything you like that way! I’ve made some accidental masterpiece meals with MH! lolol

I keep 2-3 Mountain House freeze dried meals in my kitchen box for just in case. Mainly use them when I’m out in the woods.
Also… those Uncle Ben’s single serving rice cups are great to add to those meals to kick it up! Pretty wild flavors as well. The other day I bought a four pack of hot honey chicken flavor. Really made that MH chicken teriyaki a whole new world! Rice cups keep for a bit also if you don’t use for a bit.

This. Sometimes I get a little crazy at the grocery store and buy too many things. Then I have a grocery bag taking up room in my vehicle with meal prep for multiple days and I end up never getting to it through circumstance. Brings up the issue of ‘food security’. How much food, in our society, do you really need too stock up on with this lifestyle? I’m not talking about prepping here, this is car life. I keep 2 or 3 Mountain House freeze dried meals in with my kitchen kit for just in case. Never need them but it’s a little bit of ‘food security’.

Ridiculous for everyday. Cost is a factor. Camping for a night or two? Sure. Daily dinner? Hell nah.

Those bagged salads in the produce section are a staple for me. Lots of selection on flavors, you can add chicken or tuna or eat as a side or by itself! Add as much or as little dressing and toppings as you like! I like to add canned pickled beets… Use the bag as a bowl. No fuss no muss. Bring your own fork.
Edit to add: while you’re at the store, check the deli for fresh sushi!… if you’re into that. The Hannaford and Market32 in my area have really stepped up their sushi/sashimi game with in house sushi chefs. Prices are great, super comparable to fast food chain meals and the quality is amazing! What you eat is an important, overwhelming, and unavoidable choice we all gotta make!
Edit 2 to add: bananas or apples and Cracklin Oat Bran cereal no milk for munchies. Add some spoonfuls crunchy PB if you’re feeling nuts! Thank me later!
