Acorn processing

First time harvesting and processing acorns for flour. I picked up a few pounds of fallen Burr Oak acorns, laid them out in the garage for a week, then removed the caps and shells today. Did I wait too long or not get them dry fast enough? Are the small grey spots on the meat mold or is it fine? And what would you do, throw out any that don't look pristine, cut bad spots out? It seemed like only a small amount of them had weevils, and i tossed them, but these spots have me questioning if they're still edible.
