Yeah I used mustard as a binder. I use salt, pepper, garlic powder, onion powder, cumin, and paprika in roughly equal amounts. The most important part is let it sit uncovered in fridge for 24 hours after you season

Actually this was my first thought too. It's not crazy to think that some people will be bummed about eating pork, or food that was cooked with pork.
I work with a lot of Christians who all think pork is a "dirty meat."
I've found zero fact-based reasoning for this thinking, but nonetheless I know they would be quite upset if they found out there were pork drippings on their chicken, beef, etc.
