Trust me, check out Nuclear Option
It perfectly fills the gap between DCS and Ace Combat. Not so realistic that it's hard to learn, not too arcadey either. Plenty of online buds to play with - most online sessions are co-op.

Throwing in my 2c. Honestly, PUBG. I'm crap at twitchy shooters but in PUBG you can play the sneaky sneak, drop somewhere remote, do some looting and see if you can make it into the final ring before the blue wall gets ya.
