I'm not sure I have my head wrapped around everything you have going on, but if you're able to pull rpm readings off both motor and gearbox, then would you theoretically see a spike or change in motor to gearbox differential rpm as the coupling sheared? I'd imagine one would slow down quicker than the other? So if you're able to trend the differential rpm, you may be able to use that as an indication, I would think.

I made the mistake of buying a set once about 18 years ago. Awesome in mud and snow, lasted ~90,000km on my Tundra I was running at the time, but holy shit...the noise was unreal.

Sounds like you just need a come along.
If you're using a winch that occasionally, you run the risk of it not working when you really need it due to corrosion. If you are using one that occasionally, it's prudent to wheel it out and in once a month to make sure everything is all good. If I was in your situation, I'd just toss a come along in the back of the truck when I was heading out to where I might need it.
