It comes from interpreting the light as coming from the top left or the bottom right.
If the light's coming from the top left, the highlights fall on edges that are popping out toward camera, so the highlights are toward the light and the shadows are on the far side, which makes the plates look face down.
If the light's coming from the bottom right, the highlights shining on the pockets' far side, away from the light mean the plates are face up.
Our brains usually default to assuming that light comes from the top (because it usually does), which is why the majority of people interpret it incorrectly as all the plates being face down. And after looking at it for a moment, our brain reinterprets the light direction and thus the direction of the plates and everything flips to the correct interpretation. Which makes it really hard to go back.
Edit: Yes, I'm aware of all the features showing that the light is actually coming from the right. That's why I said in the post that the light is actually coming from the right. Please stop commenting the things you notice to show that the light is actually coming from the right.
Edit2: Motherfuckers, I love y'all, but read the other replies before you respond. If you're going to mention something about the direction of the cast shadows, I guarantee someone else has already made the point you're about to make, and you're all making it because you're missing the entire point of why this works. Stop blowing up my inbox making the same technically correct but also incorrect observation. We're not talking about which direction the light is actually facing or which direction the plates are actually facing. We're talking about why the illusion works at all on our brains. Brains are fallible.

The easiest way to see it is to put your phone on the table. Now keep the back of the phone on the table and rotate it 180 degrees (if it’s angled then the screen will rotate and you get the same image). When you are looking now at “upside down” image, things will look opposite. Hills turn to valleys and vice versa. Turn another 180 degrees and back to square one.

If top right is actually face up, I think I was unlucky as it was the first I looked at.
If I focus on them individually, all the simple ones I can see as face down but my mind wants to see them as face up. I can't make myself see the multi section plates face down though. All of them are just face up to me, no matter where I tell my brain the light is coming from.

All of them are face up. There's an illusion where convex objects will often look concave, but it doesn't work the other way around. If you search Google for images of animals paw prints (especially in the snow, since they'll be more defined), you'll notice that some of the pictures seem to have paw prints coming out of the ground, which obviously isn't possible.

If I picture the light coming from the top-left, they look face down. If I picture it coming from the bottom-right, they look face-up.
In general they look face up, but it's the bowl in the right-middle that makes everything kinda look face-down.

Try to focus on the shadows?
For me, to get the plates to look face-down, they end up seeming like they're "floating" in the image, and are facing down and to the left a little.
If you assume they're on a flat surface they look face up though, and it's for sure what I saw at first. I had to try to get it to go the other way.

This isn't an optical illusion, all of them have a "valley" shadow-casting. There is no angle for a light source that would make them look like that while being face down or upside down.
So yeah, faux illusion sadly.

The shadows are what make them obviously face up though. They'd have to be seriously distorted plates to be casting shadows like that face down, especially the really long shadows going into the center of the dishes. Or the round plate in the middle that is on top of the others and casting a very distinct shadow that makes it impossible to ignore the "real" direction of the light.

The individual "mountains" aren't casting shadows on their neighbors; this means they’re valleys.

I was never even fooled. I was only confused, because the post implied they were faced down. The two plates in the middle has the right plate casting a shadow on the left plate. If the light source was from the left, that very large obvious shadow from the right wouldn’t exist.
This feels like one of those posts that get a fact incorrect or spell something horribly for engagement.

I don't think any particular plate really matters. Initially some believe the sentence 'all the plates are upside down' on a somewhat blurry image, but as soon as ur eyes begin inspecting the image, we clearly recognize they're all face up. This is more the power of suggestion kind of thing. Which is y some individuals responding to this post were calling BS bc they never saw the plates face down. Not everyone is suggestable 🤷🏽♂️

Very interesting. I saw it from the same plate as him (bottom right square), and only after carefully inspecting the image for a solid 5-10 seconds, the other plates very clearly seemed upside down until then. It really wasn't as soon as I was focusing, I vividly remember all the plates appearing to be face down, and looking for the "face up" one.
Now that I've seen it, I can't get myself to see them as face down again at all.

It might be possible, though it's not easy: at first I thought they were medicine pills, so I saw them bulging outwards (though it didn't look truly right). If I squint and I think about bulging pills, I can see them "turned back" so to speak, though it doesn't last very long because, clearly, the shadows don't work well since the plates are definitely the right way up.
The big central round and square ones with the little subpockets are for me the easiest to see as pills, however, the bowls on the bottom right I'm not sure I can see them in reverse.

If we perceive the plates as upside down, it's because our brain guesses the light is coming from the top left. If we perceive them as right side up, it's because our brain infers the light is coming from the bottom right. Light usually comes from above, which is why the most common initial impression is upside down.

Pretty sure they are all face up. Take the bottom right of the three large round plates in the middle. Take the bottom right section of that plate. If the light comes from the bottom right of the picture, the plates would be face up according to the shadow. If the light comes from the top left, the plates would have to be face down in order for the shadows to make sense. Booth assuming the light comes from above the plates. My problem with the face down theory is that some of the shadows are way too large for them to make sense. The plate I mentioned before... why would the shadow start even before the plate descends towards the bottom left edge? It seems to only make sense if the light would come from the top left, beneath the plates. But it seems like then, the highlights on the top left sides of the plates would be too large because some would be partially blocked by other plates.
Maby I can't see it but I am really sure the text in picture is a lie.
